To make this yummy Simple Vegan Banana Cake Recipe, you’ll need:
6 ripe bananas
1 1/2 cups of gluten free flour
1 1/2 cups of spelt flour (preferably organic wholemeal)
A pinch of salt
1/4 cup of honey
1 cup of vegan butter alternative (not soya based) or coconut oil
1tbsp of mixed spice if you have it
Directions: You can basically chuck it all in a food processor until smooth (be
careful not to process it too much, just until it’s all combine and
smooth), or mix the butter, honey and mashed bananas first, then
combined the flours, salt, baking powder and mixed spice in a separate bowl, then mix both bowls together.
Bake at 150C for 45 mins or until a fork or knife comes out clean
